Side Dishes

Baked Mac & Cheese
Gather Your Ingredients:
1 (16oz) bag elbow macaroni
8 Tbsp butter
8 Tbsp flour
4 cups milk
1 tsp salt
1 tsp black pepper
4 cups shredded cheddar cheese
1 cup bread crumbs, buttered (instructions below)

preheat oven to 450 degrees.
cook macaroni according to package directions.
in saucepan melt butter. add flour mixed with slat & pepper. Using a whisk, stir.
gradually pour in milk while stirring. Boil 2 minutes, stirring.
reduce heat & cook 10 minutes, stirring.
add cheese, simmer until cheese melts, then turn off.
add mac & cheese, sprinkle w/buttered bread crumbs & bake covered 20 minutes.
rest 5 minutes before serving.


PREPARING BUTTERED BREAD CRUMBS: melt 3 Tbsp butter in saucepan. Add 1 cup breadcrumbs & turn off burner. stir around to coat with butter.



Oven roasted cauliflower

1 medium head cauliflower (about 2-1/4 pounds), trimmed and cut into florets
3 large cloves garlic, thinly sliced
1/4 cup olive oil
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons grated Parmesan cheese

Directions:
Heat oven to 450 degrees F. Combine cauliflower and garlic in a large bowl. Drizzle with olive oil, lemon juice, salt and pepper. Transfer, in a single layer, to a large rimmed baking sheet. Roast at 450 degrees F for about 25 minutes, stirring once. Sprinkle with cheese. Serve immediately Yield: 6 servings
