Dinners

I decided to just put everything from pork, chicken, seafood, beef, to specialty in this tab! Enjoy!



Slow Cooker Philly Cheese Steaks
Always gather all ingredients before starting! Below is a list of the ingredients you will need:
*1.5 lbs beef round steak
*1 green pepper thinly sliced (you could always use more peppers or even types just depending on how much you want in the recipe. The more the further it will go)
*1 medium onion thinly sliced (same as above, could use more)
*1 envelope Italian dressing
*1 14oz can of beef broth
*Pack of hoagie buns
*Sliced provolone cheese for topping sandwich (& whatever else you would like to add for toppings)

Spray crock pot for nonstick spray. Cut meat into thin strips, once finished put meat in the slow cooker. Add thin cut onions and peppers, beef broth, and dressing mix. Cook on low:7-8 hrs OR high:3-4 hours. This recipe made about 5 sandwiches for me. You can use whatever sauce you like, I used A1 and it was pretty good!




Nacho Chicken Bake
Always gather all ingredients before starting! Below is a list of the ingredients you will need:
*4-6 boneless skinless chicken breasts
*1 packet taco seasoning
*1/2 cup thick & chunky salsa
*1/4 cup sour cream
*1/2 cup crushed tortilla chips
I also used shredded Mexican cheese to top this. You can add whatever other toppings you like (ex: black olives, diced onions, sliced jalapeno).

Before starting you want to preheat your oven to 400*. Place chicken on a foil covered pan. Slice each breast three times and sprinkle with taco seasoning. Next you are going to top each breast with even amounts of salsa, sour cream,& tortilla chips (as well as other toppings you desire). Bake for 20 minutes, remove from oven and sprinkle with cheese. Bake an additional 10 minutes. I serve this main dish with a side of mexican rice & beans!




One Pan Italian Chicken Bake
Always gather all ingredients before starting! Below is a list of the ingredients you will need:
*4-6 skinless boneless chicken breasts
*5-6 new potatoes cut into fours
*Green beans (I used a family sized del monte canned, drained)
*1 packet italian dressing
*1 stick melted butter
*Salt & pepper to taste
*Garlic salt & onion pepper to taste

First preheat your oven to 350*. Next put your potatoes in a strainer and run them under cold water to rinse them. After you have rinsed them cut them into fours. Arrange the chicken breasts in the middle of a 9x13 dish, place cut potatoes on one side & drained green beans on the other. Sprinkle with packet of italian dressing, salt and pepper, garlic salt, and onion powder. Top with stick of melted butter. Cover with foil and bake for 1 hour. I got this recipe from pinterest. The person who I wrote it down also said you could use fresh green beans (did not say amount though) or any other green veggie you would like. Like I said I used the family size canned green beans!




Cowboy Dinner
Always gather all ingredients before starting! Below is a list of the ingredients you will need:
*2lbs lean ground beef
*1 yellow onion diced
*1 teaspn salt
*1/2 teaspn black pepper
*1 cup frozen corn kernels
*1.5 cup salsa
*1 can beans, drained (pinto, cannilloni, black) I used cannellini
*1 cup shredded cheddar cheese
*2 packets Martha White's sweet corn bread mix & ingredients for that (on package)

Preheat oven to 375. Lightly grease 9x13 pan. Brown ground beef and onion in a skillet on medium heat sprinkle with salt and pepper, drain. Stir in corn, salsa, and beans then pour into the 9x13 pan. Sprinkle meat mixture with the cheddar cheese. Next you are going to mix corn bread according to package pour corn bread mixture over meat mixture in the pan. Bake for 40-45 minutes!




Chicken and gnocchi soup

Gather all ingredients!:
*1c cooked chicken breasts, diced
*4 tblsp butter
*4 tblsp olive oil
*1 quart half and half
1 14oz can chicken broth
*1/2c chopped celery
*1/4c flour
*2 minced garlic cloves
*1c carrots, shredded
*1 medium onion, diced
*1c fresh spinach, chopped
*1/2tsp diced thyme
*salt and pepper to taste
*16 oz package of gnocchi

In a large stock pot saute the onion, celery and garlic in the butter and olive oil for about three minutes or until the onion is clear. When the onion is clear add the flour and form a roux. Stir and cook a minute. Add half and half. In another pot cook the gnocchi according to directions on package. Add carrots and chicken to stock pot stirring often and when it gets thick add chicken broth, gnocchi, spinach, and seasoning. Cover and heat through. Could also make this dish in a crock pot just add the spinach and gnocchi towards the end. I also added garlic salt for taste!




Red beans and rice (slow cooker)
Gather all ingredients!:
*1lb dried red beans
*7c water
*1 green bell pepper, chopped
*3 celery stalks, chopped
*3 garlic cloves, chopped
*1/2 lb andouille sausage sliced
*1 tblsp creole seasoning (or to taste, my original recipe called for 3tblspn but this was too spicy for my taste)
*Hot cooked white rice

Place the first 8 ingredients in a slow cooker. Cook covered high for 7 hours/ Serve with rice and corn bread.




Brats with white cheddar sauce and Guiness sauerkraut
Ingredients:
4 bottles (12oz each) Guinness Extra Stout
1 large onion cut into rings
10 fresh bratwurst
1 lb sauerkraut
10 buns lightly grilled
White Cheddar Sauce (see recipe blow)

Directions:
Preheat grill for medium/ high heat. If you do not have a grill you can also use a oven at 375 just put the brats on a cookie sheet in the oven for 10 minutes.
In a large pot combine beer and onion bring to a boil. Add brats and reduce head to medium cook for 10-12 minutes.
Remove brats from beer mixture. Reduce heat to low. Add sauerkraut and simmer while the brats cook on the grill (or oven).

White Cheddar Sauce
2 tblspns butter
2 tblspns flour
1/4 teaspn salt
dash black pepper
1c Shredded white cheddar
Directions for sauce:
In a medium saucepan melt butter over medium heat. Whisk in flour, salt, and pepper. Add milk all at once, whisking constantly. Cook and stir constantly until mixture bubbles and thickens slightly. Remove from heat and stir in white cheddar cheese. Top brats & sauerkraut with sauce! Enjoy!




Tex-Mex BBQ pulled pork

Makes 8-10 servings
Prep: 15 minutes, cook: High for 8 hours, low for 30 minutes
Ingredients needed:
1 2-21/2 lbs boneless pork loin roast
1 Medium onion, sliced
2c bottled bbq sauce
3/4c thick and chunky salsa
1 teasp chili powder
1 teasp ground cumin
1/2 teasp salt
Hamburger buns
Provolone Cheese (or whatever cheese you prefer)

Directions:
1. Place pork in a 3 to 4 qt slow cooker. Scatter onion over the top. In a medium bowl mix bbq sauce, salsa, and spices. Pour over pork and onion.
2. Cover and cook on low for 8-10 hours
3. Remove pork from slow cooker and place on a cutting board. Shred using two forks. Return shredded pork to cooker. Stir in salt. Increase heat to high cover and cook 30 minutes more.
4. Serve mixture on buns topped with cheese!



Loaded Potato Soup

Gather needed ingredients:
*4 red potatoes
*2 teasp olive oil
*1/2 c prechopped onion
*1 1/4 c chicken broth
*3 tblsp all-purpose flour
*2 c 1% low-fat milk, divided
*1/4 c reduced-fat sour cream
*1/2 teasp salt
*1/4 teasp ground black pepper
*3 bacon slices, crumbled
*1.5 oz cheddar cheese, shredded (about 1/3 cup)
*4 teasp thinly sliced green onions
* I also added about half a can of sliced carrots, drained & cut


Pierce potatoes with a fork. Microwave on HIGH 13 minutes or until tender. Cut in half; cool slightly.
While potatoes cook, heat oil in a saucepan over medium-high heat. Add onion; sauté 3 minutes. Add broth. Combine flour and 1/2 cup milk; add to pan with 1 1/2 cups milk. Bring to a boil; stir often. Cook 1 minute. Remove from heat; stir in sour cream,carrots, salt, and pepper. Arrange bacon on a paper towel on a microwave-safe plate.Cover with a paper towel; microwave on HIGH for 4 minutes. Crumble bacon. Discard potato skins. Coarsely mash potatoes into soup. Top with cheese, green onions, and bacon.



Brown Sugar Meat Loaf
Gather all ingredients needed before you start:
*1/2c packed brown suagr
*1/2c ketchup
*1 1/2lbs lean ground beef
*3/4c milk
*2 eggs
1 1/2 teasp salt
*1/4 teasp black pepper
*1 small onion, chopped
*3/4 finely crushed saltine cracker crumbs (I have always used Italian bread crumbs)

1. Preheat oven to 350*. Lightly grease a loaf pan (5x9in)
2. Press the brown sugar in the bottom on the pan and spread the ketchup over the sugar
3. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup and brown sugar.
4. Bake in preheated oven for 1 hour or until juices are clear



Creamy Italian White Bean Soup

Makes about 6 cups or 4 main dish servings

Be sure to gather all your ingredients:
*1 tblsp olive oil
*1 medium onion, finely chopped
*1 medium celery stalk, chopped
*1 garlic clove, minced
*2 cans white kidney beans (cannelloni), rinsed and drained
*1 can (13 3/4 to 14.5 oz.) chicken broth
*1/4 teasp coarsely ground black pepper
*1/8 teasp fried thyme leaves
*1 bunch (10-12 oz) spinach
*1 tblsp fresh lemon juice
*freshly grated parm cheese (optional)

1. In a 3-qt saucepan, heat oil over medium heat until hot. Add onion and celery and cook 5-8 minutes until tender, stirring occasionally. Add garlic; cook 30 seconds stirring. Add beans, chicken broth, pepper, thyme, and 2 cups water; heat to boiling over high heat. Reduce heat to low simmer uncovered for 15 minutes.
2. Meanwhite, discard tough stems from spinach; thinly slice leaves.
3. With slotted spoon, remove 2 cups bean and vegetable mixture from soup; set aside. In blender at low speed, with center part of cover removed to allow steam to escape, blend remaining soup in small batches until smooth. Pour pureed into large bowl after each batch.
4. Return soup to sauce pan stir in reserved beans and vegetables. Heat to boiling over high heat. Sitting occasionally. Stir in spinach and cook 1 minute or until wilted. Stir in lemon juice and remove from heat. Serve with parm cheese garnish if you would like.



Harvest Chicken Salad
Yields 3-4 servings
Ingredients:
1 pound chicken breast (chopped, diced, or shredded)
1/2 cup diced red onion
1/2 cup diced apple
2/3 cup grapes, halved
1/3 cup NatureBox Dried Cranberries or Zingy Currants
1/4 cup sliced almonds
1/2 cup Greek yogurt
1 1/2 TBSP freshly squeezed lemon juice
1/2 tsp garlic powder
Kosher salt and freshly ground black pepper, to taste
Ciabatta or whole wheat bread, toasted, for serving

Directions:
In a large bowl, combine chicken, red onion, apple, grapes, cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.Serve sandwiches on ciabatta bread with chicken salad mixture. You can substitute celery in place of onion.
